Shepherd's Pie
A delicious and super simple recipe to warm you on cold days.
(Recipe tested on 1/5/2010)
 
Breast Meat from 2 Pheasants
One 10 3/4 oz can Cream of Chicken Soup
One 12 oz. bag of frozen vegetables (peas, corn, carrots and beans)
4 - 5 medium potatos cubed & boiled, 2 Tablespoons butter and 1/4 cup milk (for mashed potatos)
        (may substitute with instant mashed potatoes)
 
Preheat oven to 350 degrees.  Cut the breast meat into small bite-size cubes and lightly brown in a fry pan with a small amount of cooking oil.  In a bowl, mix the meat, soup and vegetables together.  Salt and pepper to taste.  Pour mixture into 8 x 8 glass 2-quart casserole dish and spread evenly across bottom.  Place in preheated oven for 30 minutes.  
 
While meat and vegetable mixture is baking, make mashed potatos. 
 
Remove meat and vegetable mixture from oven after the 30 minutes and carefully place the mashed potatos on top.  Spread the mashed potatos to completely cover the meat and vegetable mixture.  Place in oven and bake for an additional 30 minutes or until meat and vegetable mixture is bubbling around the sides of the mashed potatos.  Remove from oven, let sit for 5 minutes and serve.
